Taco Balls

I really wasn't sure about these when I made them, I thought they were okay, but Logan really really liked them! So we will definitely do them again.

1 package jumbo crescent rolls
3 oz cream cheese
1/2 cup mexican shredded cheese
3/4 cup shredded chicken (again I boiled it in chicken broth and then shredded it)
1/3 cup taco sauce
2 tsp taco seasoning mix
1/4 cup of the mexican cheese for sprinkling

1. Preheat oven to 350 degrees F.
2. Mix softened cream cheese and shredded cheese.
3. Add chicken, taco sauce and seasoning.
4. Roll mixture into crescents.
5. Sprinkle cheese on top and bake for about 12 minutes, or until golden brown.

Cheesy Chicken Pot Pie Cups

These were pretty good. I'm hoping the kids will grow into them and eat them. They wouldn't really touch them the first time I made them though.

8 count homestyle biscuits
1 cup cooked chicken breast (I boiled it in chicken broth and then shredded it)
1 can cream of chicken soup
2/3 cup shredded cheddar cheese
1 1/2 cup frozen veggies (corn, carrots, and broccoli is what I used)
1 tsp dried parsley flakes
1 tsp minced onion
1/4 tsp pepper
1/2 tsp salt

1. Preheat oven to 400 degrees F.
2. Place each biscuit into a cup of a greased muffin pan, press the dough up the sides of the cup.
3. Combine chicken, cream of chicken soup, veggies, cheese, parsley, pepper, salt, and onion.
4. Spoon mixture into each of the cups.
5. Bake for 12 to 15 minutes until it's golden brown.

Crockpot Chicken Noodle Soup

This was sooooo good! I've never made homemade chicken noodle soup before and I was super excited about how it turned out. Someday I'll try to make homemade noodles to go with it :)

5 cups chicken broth
1 12.5 oz can cream of chicken soup
1/2 cup finely chopped onions
1/2 cup finely chopped celery
1/2 cup finely chopped carrots
1/2 cup green onions, sliced
1 15 oz can whole kernel corn, drained
Salt and pepper to taste
3 cups Egg noodles
1 chicken breast

1. Remove fat from chicken and place in crock pot along with all of the other ingredients except the noodles.
2. Let cook in crock pot on low for 5-6 hours.
3. After chicken is cooked through, remove and shred.
4. Add noodles fro the last hour and turn on high.

Root Beer Pulled Pork

1 Pork Roast
1 (12 oz) can of Root Beer
1 bottle of BBQ sauce (my favorite is kraft)
Package of sesame hamburger buns

1. Put pork roast in crock pot, cover in root beer and cook on low 6-8 hours.
2. After it's done cooking, pull apart and add BBQ sauce.
3. Wait until BBQ sauce is heated through and enjoy on hamburger buns.

Really yummy with a side of fries (homemade or frozen)!

Easy Banana Bread


This isn't a fancy recipe, but it was simple and turned out yummy.

3 or 4 very ripe bananas
1/3 cup melted butter
1 cup sugar
1 egg
1 tsp vanilla
1 tsp baking soda
pinch of salt
1 1/2 cups flour

1. Preheat the oven to 350 degrees F.
2. Mix butter and mashed bananas.
3. Mix in sugar, egg, and vanilla.
4. Add baking soda and salt.
5. Add flour.
6. Pour mixture into a greased bread loaf pan.
7. Bake for 1 hour.

Crock Pot Potato Soup

This was stinkin amazing! I made it forever ago when it was cold out... and LOVED it!

1-30 oz bag of hash browns-I always buy the Ore-Ida ones
3-14oz cans of chicken broth
1 can cream of chicken soup
1/2 cup chopped onion
1/4 tsp pepper
1 8oz package softened cream cheese (not fat free)

grated cheese
bacon bits
diced green onion

1. Add everything to the crockpot except the cream cheese.
2. Cook on low about 6-8 hours (the potatoes get all creamy).
3. A couple hours before you eat, add the cream cheese come back and stir it until it is all melted (it took the full two hours for me).
4. Dish out, top with cheese, bacon, and green onion. AMAZING!

Chicken Salad Sandwiches

2- 12.5 oz cans of chicken
3/4 cup mayonnaise
1 cup halved red grapes
1 diced green onion
1 diced celery stalk
1/2 cup diced apple
salt and pepper to taste (make sure you use enough salt or it really isn't that good :)
cashews

croissants

1. Mix everything together in a bowl.
2. Scoop onto a croissant that is cut in half and enjoy!

Crockpot Ranch Potatoes

2 lbs red potatoes
1 can cream of chicken soup
1 cup sour cream
1 hidden valley ranch packet

1. Cut up potatoes.
2. Mix cream of chicken soup, sour cream, and ranch packet together.
3. Combine potatoes and mixture in the crockpot.
4. Cook on low for 6 hours.
5. Enjoy!

Lemon Parmesan Broccoli

This broccoli was AMAZING as long as you don't get carried away with the lemon juice :)

2 small DRY bunches of broccoli (this fed Logan and I, of course the girls just wouldn't touch it...)
5 Tbsp olive oil
1 1/2 tsp salt
4 minced cloves of garlic

1/4 of a lemon
lemon zest
1.5 Tbsp olive oil
1/3 cup of shredded parmesan cheese (you could use grated instead)

1. Preheat oven to 425 degrees F and cover a cookie sheet in tin foil.
2. Cut broccoli up in florets (I like them smallish)
3. Toss with olive oil, salt, and minced garlic
4. Cook in oven 15-20 mins until broccoli starts to get brown on the edges and crunchy.
5. Pull out of oven and sprinkle lemon juice, lemon zest, olive oil, and shredded parmesan cheese on top.
6. Enjoy!

Creamy Garlic Pasta

2 tsp olive oil
4 minced garlic cloves
2 tbsp butter
1/4 tsp salt
1/2 tsp pepper
3 cups chicken broth
1/2 lb angel hair pasta
1/2-3/4 cup grated parmesan cheese (last time I made it with 1 cup and it was too much... so depending on how strong you like your parmesan flavor you can decide)
3/4 cup heavey whipping cream
2 tbsp finely chopped fresh parsley

1. Add olive oil to a big pot, heat on medium/low heat.
2. Add the garlic and cook for 1-2 mins, stirring.
3. Mix in the butter until melted.
4. Add salt, pepper, and chicken broth.
5. Turn heat to high until it comes to a boil.
6. Add the pasta and cook as long as package directions say.
7. Reduce heat to medium and add parmesan until melted.
8. Turn heat off and add whipping cream and parsley.
9. Enjoy immediately!

Need a Name Delicious Cake

8 oz Cream Cheese
1 yellow cake mix
3 eggs
1 stick of butter or 1/2 cup
1 lb of powdered sugar (4 cups)

1. Preheat oven to 300 degrees F and grease 9x13 pan.
2. Combine melted butter, 1 egg, and cake mix and mix well.
3. Press into bottom of pan, spread evenly.
4. Mix 2 eggs, softened cream cheese, and powdered sugar together well.
5. Pour powdered sugar sauce over the top of the cake mixture in pan.
6. Cook in oven for about 40 minutes (until top is turning a golden brown).

Copy Cat Crock Pot Olive Garden Zuppa Tuscana

1 lb Italian sausage (mild or hot, whichever you prefer)
3 large potatoes sliced thinly and fourthed (I used 6 small red because I didn't have regular)
1 large onion
1/4 cup bacon bits
2 minced garlic cloves
2 cups kale
16 oz chicken broth
1 quart water
1 cup heavy whipping cream

1. Brown sausage and chop into small pieces.
2. Combine sausage, potatoes, diced onion, bacon bits, minced garlic, chicken broth, and water.
3. Cook on high in crock pot for about 4 hours.
4. Just before eating, turn off crock pot, add kale and cover for 5 minutes.
5. Then add whipping cream, mix, and eat!

Olive Garden Breadsticks Copy Cat

1 1/2 cups of warm water
1 package of active dry yeast
4 cups of all purpose flour (the recipe called for 1/4 cup more, but that was just a little too much, so I'm guessing about 4 cups would be better)
2 Tbsp unsalted melted butter
2 Tbsp sugar
1 Tbsp salt

1. Dissolve sugar and yeast in the warm water and let sit for 10 minutes.
2. In a separate bowl combine flour and salt.
3. Add yeast mixture and melted butter.
4. Mix well, knead until dough is smooth.
5. Roll dough into strips, lay on greased cookie sheet, cover the dough and leave it to sit in a warm place for about 45 minutes.
6. Preheat oven to 400 degrees F.
7. Cook breadsticks for 6 minutes, then brush breadsticks with half of 1 stick unsalted butter, 2 tsp garlic powder, and 1 tsp salt all mixed together.
8. Cook breadsticks for 6-7 more minutes.
9. Brush the other half of the butter mixture on the breadsticks.

Super Easy Yummy Cookies

Prep time: 10-15 minutes
Cook time: 13-15 minutes

Any cake mix you want (I like fun fetty or devil's chocolate best)
1 stick of butter
3 eggs
White or regular chocolate chips (optional)

Preheat oven to 350. Mix all ingredients together. Warning it will be a very thick mixture. Don't use regluar hand mixers. Use spoon and elbow grease or something like a Kitchen Aid. Use cookie dough scoop or spoon to form 1 inch balls bad place them 1 inch apart on a greased cookie sheet. Bake for 13-15 minutes or until they look done.

Lasagna Roll Ups

1 Roll = 224 calories

9 lasagna noodles, cooked
1 (10 ounce) package frozen chopped spinach, thawed and completely drained
1 (15 ounce) container fat free ricotta cheese
1/2 cup grated Parmesan cheese
1 egg
1/2 teaspoon minced garlic
1/2 teaspoon dried Italian seasonings
salt and fresh pepper
(optional) 1 chicken breast, cooked and diced
32 oz tomato sauce (I used spaghetti sauce)
9 Tablespoons part skim mozzarella cheese, shredded

Preheat oven to 350°. Make sure you drain the spinach well. Combine spinach, ricotta, Parmesan cheese, egg, garlic, Italian seasonings, chicken, and salt and pepper in a medium bowl. Pour about 1 cup sauce on the bottom of a 9 x 13 baking dish.

Place a piece of wax paper on the counter and lay out lasagna noodles. Make sure noodles are dry by patting them with a paper towel. Take 1/3 cup of ricotta mixture and spread evenly over a noodle. Roll carefully and place seam side down onto the baking dish. Repeat with remaining noodles.

Ladle sauce over the noodles in the baking dish and top each one with 1 Tablespoon of mozzarella cheese. Cover baking dish tightly with aluminum foil and bake for 40 minutes, or until cheese melts. Makes 9 rolls. To serve, ladle a little sauce on the plate and top with lasagna roll.

Classic Bean Salad.

Prep time: 5-10 minutes

1 can black beans
1 can pinto beans
1 can kidney beans
1 can white beans
1 whole avocado
1/4 cup onion
Vinegar (optional)

Drain all beans and pour into a medium size mixing bowl. Mix beans together then add avocado and onion,or any vegetable of your choice. Add about a Tbsp of vinegar for a bolder taste.
Perfect for last minute needed side dishes and great for protein as well!

Crockpot Chicken Caesar Sandwiches

I really liked this! I thought it would make a good sub for tuna fish (which I DO NOT like). It's a good meal for an outdoor picnic and I liked it for lunches (it was good leftover too!)
Serves 4-6

2 pounds boneless skinless chicken breasts (fat cut off)
1/2 to 1 cup ceasar dressing
1/2 cup shredded Parmesan cheese
1/4 cup fresh chopped parsley (if you don't have fresh use around 2 teaspoons of dried parsley)
1/2 teaspoon ground pepper
sliced red onion
2 cups shredded romaine lettuce
4-6 regular sized hamburger buns

1. Place chicken in crockpot with 1-2 cups of water, cover and cook on low heat for 4-6 hours.
2. Remove chicken and shred.
3. Place chicken back in the crockpot and pour dressing, Parmesan cheese, parsley, and pepper over the top. Only add enough dressing to make it all stick together. Stir.. Cover and cook on high heat for 30 minutes or until mixture is hot.
4.Spoon onto bun with lettuce, sprinkled parmesan cheese, and some slices of red onion.

Italian Chicken & Rice

Serves 4
2-4 frozen boneless skinless chicken breasts
1 pkg. (8 oz.) cream cheese (let sit out to soften)
1 can cream of chicken soup
1 pkg. italian dressing seasoning (the dried kind in the packet)
rice

1. Stir the cream cheese, cream of chicken, and seasoning in the crockpot.
2. Turn crockpot on low and let sit 30 minutes and then mix it well.
3. Put the chicken in (you can put it in frozen, I usually defrost it and cut off the fat and then put it in).
4. Cook on high for 4-6 hours or until chicken is cooked.
5. I shredded the chicken, but you can just cut it into strips.
6. Cook the rice.
7. Dish out some rice and pour the chicken mixture on top! Super yummy!

Oven Fries

Serves 4

2 large potatoes
2 tbsp olive oil
salt to taste
1/2 tsp dried thyme

1. Preheat oven to 450
2. Cut up potatoes into fry shape
3. Toss potatoes, oil, salt, and thyme
4. Bake about 20 minutes (it will be brown and tender)

Asparagus Gratin

We ate this as a side with the Grilled Salmon (super yummy!).
Serves 3-4

2 pounds thin asparagus
3 cups water
salt and pepper
2 tablespoons butter
2 tablespoons flour
¾ cup Parmesan cheese, grated and divided (1/2 and 1/4)
½ cup Monterey Jack cheese, shredded

1. Adjust oven rack to upper-middle position and heat broiler. Place paper towels in dish you plan to cook it in (I used a 9x13). Snap the woody ends off the asparagus and set both stalks and ends aside.
2. Bring water to a boil in a large skillet over medium-high heat. Add asparagus ends and ¼ teaspoon salt and cook covered, for 5 minutes. Using slotted spoon, remove asparagus ends and discard. Add asparagus stalks to skillet, cover and cook, stirring occasionally, until nearly tender,2-4 minutes. Transfer asparagus to paper lined dish. Pour asparagus water into liquid measuring cup. If liquid does not read 1-cup mark, add water until it does.
3. Melt butter in now empty skillet over medium heat. Add flour and cook, stirring constantly until golden, about 1 minute. Whisk in reserved asparagus water and bring to boil. Reduce heat to medium-low and simmer until thickened, 3-5 minutes. Off heat, whisk in ½ cup Parmesan and Monterey jack until smooth. Season with salt and pepper. Cover and let stand for 5 minuets. (My sauce was really thick, but really good!)
4. Remove paper towels from baking dish. Drizzle sauce over center of asparagus and top with remaining Parmesan. Broil until cheese is golden and asparagus is tender, 4-8 minutes. Serve.

Taco Soup

My awesome friend Ashlee Chappell made this for me when we brought Abby home from the hospital. We make it all of the time now! Super easy and super good!
Serves 4

1 lb hamburger
1 cup water
1 packet taco seasoning (I always use Taco Bell's)
1 can mild chili beans
1 can corn (drained)
1 can pinto beans (rinse and drain)
1/2 can stewed tomatoes
1/2 can diced tomatoes
1 package ranch dressing mix
tortilla chips
sour cream
grated cheese


1. Brown hamburger.
2. Add taco seasoning.
3. Mix remaining ingredients and bring to a boil.
4. Simmer for 15-20 minutes.

Honey Lime Enchiladas

We just tried this recipe a few days ago... first enchilada recipe that I've ever liked! It was super good! Even Abby liked it.
Serves 3

1.5 lbs chicken, cooked and shredded (I put mine in a crockpot for a couple of hours on high with chicken broth, cooks it so its really easy to shred)
1/3 cup honey
1/4 cup lime juice
1 Tbsp chili powder
1/2 tsp garlic powder
2 (10 oz) cans green enchilada sauce
equal parts mixed together of:
mozzarella cheese, shredded
cheddar cheese, shredded
flour tortillas

1. Mix together honey, lime, chili powder, and garlic powder and then add to shredded pork or chicken. Let the sauce soak into the meat for about 30 minutes.
2. Lightly spray pan (I used a regular 9x13) with non-stick baking spray. Pour green enchilada sauce into pans to coat the entire bottom. 
3. Fill tortillas with shredded meat and desired amount of cheese. Roll and place in dish.
4. Pour remainder of sauce over enchiladas and sprinkle more cheese on top – don’t be stingy!
5. Bake uncovered at 350 degrees for 30 minutes. Then turn on broiler and place enchiladas nearer the top of oven. Let it broil until cheese is slightly brown and crispy (it only takes a couple of minutes).

Crockpot Chicken Tortilla Soup

We just tried this today! It was amazing!
Serves 4

3 cups chicken broth
2 chicken breasts uncooked
1/2 onion, diced
1 can corn
1 can black beans
2 green onions, diced
28 oz can of diced tomatoes in juice
1 cup diced celery and carrots
3 cloves of garlic, chop very fine (I used my food processor)
1/4 tsp crushed red pepper
1/2 tsp cayenne pepper
1 tsp cumin
1 tsp salt
 grated cheese
tortilla chips

1. Throw chicken broth, chicken (I just trimmed off the fat and threw it in), onion, corn, black beans, green onions, tomatoes, celery, carrots, garlic, and spices into crock pot.
2. Let cook on low for 8-10 hours or on high for 6 hours.
3. Right before eating, pull chicken out and shred it and throw it back in. Let it reheat for a few minutes.
4. Dish up into bowls and put some cheese and tortilla chips on top (or I just use the chips as my spoon!)

Orange Creamsicle Cookies

Makes about 3 dozen.

2 1/2 cups all purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup butter, softened
1/2 cup sugar
1/2 firmly packed brown sugar
1 large egg
1 teaspoon vanilla extract
2 tablespoons orange zest
2 cups white chocolate chips

1. Preheat oven to 375 degrees.
2. In a small bowl, combine flour, baking soda, and salt; set aside.
3. In a large bowl, cream butter and sugars until light and creamy. Beat in egg and vanilla until smooth.
4. Gradually add flour mixture until combined. Stir in orange zest and chips.
5. Drop rounded teaspoonfuls onto ungreased cookie sheets. Bake 8 - 10 minutes or until golden brown around edges. Do not overcook! . Cool for several minutes on cookie sheets before transferring to rack to cool completely.

Cake Batter Pudding Cookies

Makes about 3 dozen.

3/4 cup butter
3/4 cup brown sugar
1/4 cup sugar
1 (3.4 oz) package instant vanilla pudding mix
3/4 cup yellow cake mix
2 eggs
1 tsp vanilla
1 tsp baking soda
2 and 1/4 cups flour
1/2 tsp salt
sprinkles

Preheat oven to 350 F.
Stir together flour, salt and baking soda and set aside.
In a large bowl, cream butter and sugars together.
Add in pudding package and cake mix and beat until well blended.
Add eggs and vanilla and mix until smooth.
Add flour mixture slowly until well incorporated.
Mix in sprinkles.

Roll into 1" balls and place on greased baking sheet.

Bake at 350 F for 10-12 minutes.

My Favorite Chocolate Chip Cookies

They turn out better if you only do one batch at a time. I doubled it once and they just weren't as good...
Makes about 3 dozen.

3/4 cup softened butter
3/4 cup brown sugar 
1/4 cup granulated sugar 
1 egg 
2 tsp vanilla extract 
2 cup all purpose flour 
2 tsp cornstarch 
1 tsp baking soda 
1/2 tsp salt 
1 cup semisweet chocolate chips


1. Preheat oven to 350 degrees F.

2. Cream together butter and sugars until fluffy and light in color; add egg and vanilla and blend in.

3. Mix in flour, cornstarch, baking soda and salt. Stir in chocolate chips.

4. Drop dough onto a prepared baking sheet.  Bake for 8-10 minutes, until barely golden brown around the edges.  (The tops will not brown, but do NOT cook longer than ten minutes.)

5.  Let cool and remove from the baking sheet.

Tin Foil Dinner

Serves 1

Beef patty
1 potato
1 carrot
Desired spices (salt, pepper, onion salt, garlic powder etc)

1. Put desired spices on hamburger.
2. Cut up potatoes and carrots, lay on hamburger, spice again as desired.
3. Wrap in tin foil and cook in oven at 375 degrees for 1 hour.

Tilapia with Roasted Veggies & Olives

Serves 4

1 lb small red potatoes, halved
1 yellow (or orange) bell pepper, cut into 1-inch pieces
4 garlic cloves, finely chopped
2 tsp olive oil
½ tsp salt
¼ tsp black pepper
2 cups cherry tomatoes, halved
4 tilapia fillets
1 tsp grated lemon zest
½ tsp fennel seeds, crushed
12 pitted green olives, chopped
4 lemon wedges

1. Preheat oven to 425.
2. Spray pan with nonstick spray. Place potatoes, pepper, garlic, oil, ¼
tsp salt, and 1/8 tsp pepper in pan. Stir to coat.
3. Roast, stir a couple of times until potatoes are almost tender, about 30
mins.
4. Add tomatoes, stir.
5. Place tilapia on top of veggies, sprinkle with lemon zest, fennel seeds,
and ¼ tsp salt and 1/8 tsp pepper.
6. Roast until tilapia is cooked, between 10 and 13 mins.
7. Sprinkle with olives and serve with lemon wedges.

Shepards Pie in the Crockpot

Serves 4

3 c. instant mashed potatoes, made
1 lb. ground beef
2 cloves garlic
2 c. frozen mixed vegetables
1 tbsp. onion flakes or 1 small onion
1/2 tsp. seasoned salt
1/2 tsp. onion powder
1/4 tsp. pepper
1/4 tsp. paprika
1 c. water
2 c. grated cheese

1. Brown beef with onion flakes and garlic.
2. Mix beef with frozen vegetables, salt, onion powder, pepper and
paprika.
3. Pour into crock pot.
4. Pour water over the mixture.
5. Sprinkle with cheese.
6. Top with mashed potatoes.
7. Cook on low for 6-8 hours in the crockpot.

Salmon Alfredo

Serves 4

¼ cup butter
1 cup heavy cream
1 clove garlic
1 ½ cup shredded parmesan cheese (try 1 cup)
¼ tsp dried parsley
1 salmon fillet
Salt & pepper to taste on salmon
Fettuccine noodles, cooked

1. Melt butter over low heat, add in cream, garlic & parsley. Cook 1.5 hrs
on low.
2. Bake salmon at 450 for 6 min (or until cooked) seasoned with salt &
pepper.
3. Add parmesan cheese to alfredo sauce, add in salmon (cut up) and
pour over cooked fettuccine noodles.

Chicken Quesadillas

Serves 2

2 shells
Cheddar cheese
1 full Chicken Breast diced and cooked with dry onion flakes and crushed red peppers to taste
 (if I have leftover chicken after we are done I usually eat it in a salad the next day--mmm!)
Creamy Jalapeno Sauce from Taco Bell
Flour shells

1. Lather the sauce onto a flour shell along with desired amount of
chicken and cheese. I cook mine in a George Foreman or a quesadilla
maker if you are lucky enough to have one.

Porcupine Meatballs

Serves 4

1 lb ground beef
½ cup rice
½ cup water
3 tbsp onion flakes
1 tsp salt
½ tsp celery salt
1/8 tsp garlic powder
1/8 tsp pepper
16 ounces tomato sauce
1 cup water
2 tsp Worcestershire sauce

1. Mix ground beef, rice, water, onion, salt, celery salt, garlic powder,
and pepper together in bowl.
2. Shape into balls and place in pan.
3. Mix tomato sauce, water, and worcestershire sauce together.
4. Pour over the top of the meatballs.
5. Bake covered in 350 degrees oven for 45 minutes.
6. Uncover and bake for 15 minutes.

Meatloaf

Serves 4

2 lbs lean hamburger meat
Salt & pepper
½ onion diced
1 raw egg
1 slice bread-crumbled up (very small—crumbs)
Ketchup ½ cup
Brown sugar ¼ cup
1 squirt of mustard

1. Mix ketchup, brown sugar and mustard.
2. Mix hamburger, salt & pepper, onion, egg, bread crumbled together.
Add half of sauce mixture.
3. Place meat mixture in pan and cover with remaining sauce.
4. Bake in oven at 350 for 30-45 minutes

*Good with scalloped potatoes on the side.

Lasagna

Serves 4

1 ½ cups prego spaghetti sauce
Lasagna noodles
32 oz cottage cheese
16 oz mozzarella cheese, grated

1. In pan layer the lasagna noodles, prego sauce, cottage cheese, then
mozzarella cheese. Do this twice.
2. Then put layer of noodles, prego sauce and mozz cheese.
3. Cover and bake in oven at 275 degrees for 3 hours or 350 degrees for
1 hour.

Jicama Wraps

Serves 3

Flour tortillas
1 small head romaine lettuce
1-2 limes, divided
1/2 c. mayonnaise
2 tsp. ground cumin
1/4 tsp. cayenne pepper
3 c. diced cooked chicken
1/2 small jicama
1 small mango
1/4 tsp. salt

1. Thinly slice lettuce.
2. Zest the limes to measure 1 teaspoon zest and then juice to measure 3
tablespoons.
3. Combine zest, 1 tablespoon juice, mayonnaise, cumin, and cayenne;
mix well and transfer to a ziplock bag, set aside.
4. Cook chicken. Season with lime juice, salt, and pepper.
5. Peel jicama and mango; then slice each into 1/4 inch strips.
6. Combine jicama, mango, salt and remaining lime juice.
7. Place lettuce in shells, top with chicken, then jicama mixture and
drizzle with mayo mixture.

Grilled Salmon

Serves 2

2 salmon fillets
½ teaspoon garlic powder
2 teaspoons lime juice
½ cup soy sauce

1. Mix garlic powder, lime juice, and soy sauce and marinate salmon for one hour (or longer depending on how much flavor you want!)
2. Drain off marinade and broil about 10 mins on each side. (If oven broiler is used, place it on lowest position.)

Greek Style Stuffed Peppers

Serves 4

4 large bell peppers, stems intact
2 tsp olive oil
1 onion, chopped
3 garlic cloves, minced
3 cups tightly packed baby spinach
½ tsp dried oregano
½ lb ground beef
1 cup cooked brown rice (I used white cuz that’s what Emma will eat)
½ cup drained petite diced tomatoes (I left these out cuz I hate tomatoes)
1/3 cup crumbled fat-free (I could only find low-fat) feta cheese
2 tbsp pine nuts, toasted (I just stuck them in the oven for a few min on 375-beware! I forgot about them both times I've cooked this and burned them and had to cook some more haha!)
½ tsp salt
¼ tsp black pepper

1. Preheat oven to 375.
2. Slice off ½ inch from top of each pepper. Remove ribs & seeds. Microwave bottoms & tops of pepper for about 3 minutes, let cool.
3. Heat oil in skillet over medium heat.
4. Add onion and garlic, cook until onion is soft.
5. Add spinach, oregano and cook til wilted and liquid is evaporated. Put mixture in a large bowl.
6. Add beef to skillet and cook.
7. Add beef, rice(pre-cooked), tomatoes, feta, pine nuts, salt, and pepper
to spinach mixture. Gently stir.
8. Stuff into each bell pepper. Place into medium deep casserole dish. Put tops back on the peppers and spray with nonstick cooking spray.
9. Bake about 30 mins.

Ginger-Seared Salmon

Serves 2

4 green onions, thinly sliced
1 Tbsp. finely chopped gingerroot
1 Tbsp. canola oil
2 salmon fillets
1 container Toasted Asian Sesame Dressing
1 pkg. fresh snow peas
1 red pepper, chopped
3 cups cooked rice

1. Cook and stir onions and ginger in hot oil in skillet on
medium heat until heated through.
2. Add fish, flesh-side down; cook on high heat 2 min. Turn fish over;
Pour dressing over the top. Top with vegetables (add a little more dressing on top), cover.
3. Cook on medium-low 7 to 10 min. or until fish flakes easily with fork.
4. Serve over rice.

Fajitas (Chicken or Beef)

Serves 2

(Sometimes I use barbeque sauce when I do chicken, instead of the Italian.
Super yummy.)
1 bell pepper per person (red, green, orange, or yellow-up to 4)
1 onion
1 chicken breast or large steak cut up into bite size pieces
1 bottle Fat Free Zesty Italian Dressing
Onion Flakes
Crushed Red Peppers
Flour shells-2 per person

1. Put chicken (or steak) into frying pan. Cook with a coating of
dressing, onion flakes, and a tablespoon-ish of crushed red peppers
depending on desired spiciness.
2. Slice bell peppers and onion.
3. Remove chicken (or steak) from the frying pan.
4. Put bell peppers and onion into pan and coat with dressing, onion
flakes and some crushed red peppers.
5. When veggies are heated through add chicken (or steak) again and let
it all heat through again.
6. Heat flour shells in microwave.
7. Scoop fajita mix in flour shell and enjoy.

I made this one up adjusting from numerous fajita recipes that I have seen.

Corn Chowder

Serves 4

2 cans creamed corn
4 oz cheese (I usually add a lot of cheese until it tastes good to me)
3 tbsp onion flakes or ½ cup chopped onions
1 tspn salt
¼ tspn garlic powder
3 cups water
4 cups potatoes (about 4 potatoes)
1 cup milk
Crumbled bacon if desired

1. Boil potatoes for 20 mins, drain water but save 3 cups of it.
2. Put creamed corn, onion flakes, salt, and garlic powder in large pot, heat up on
medium.
3. Add water, potatoes, & milk lower than medium until heated.
4. Add cheese when hot. Serve when the cheese is melted

Chicken Vegetable Soup

Serves 4

6 whole chicken bouillon cubes
½ tsp onion salt
1 ½ tsp salt
¼ tsp pepper
¼ tsp garlic powder
3 tbsp onion flakes
6 cups water
16 oz tomato sauce
4 cups of potatoes
2 carrots
20 oz cooked chicken (cut up into bite size pieces, 1 full breast)

1. Throw it all in the pot and cook for 1 hour.
2. Or throw in crock pot and cook for 3 hours on high.

Chicken Lo Mien

Serves 2

½ lb linguine noodles, uncooked
¼ cup kraft asian toasted sesame dressing
1 chicken breast boneless, skinless, cubed
2 cloves of garlic, minced
1 red bell pepper (cut in strips)
1 onion (cut in strips)
½ cup fat free reduced-sodium chicken broth
1 tbsp peanut butter
¼ cup soy sauce
2 tbsp chopped planters cocktail peanuts

1. Cook linguine as directed on package.
2. Heat dressing in large skillet on medium-high.
3. Add chicken and garlic, stir fry 3 min or until chicken is no longer
pink.
4. Add veggies, broth, and peanut butter.
5. Add chicken mixture and soy sauce to linguine noodles. Top with nuts
on plate.

Chicken Cordon Bleu

Serves 4

16 oz chicken breast, skinless, boneless
8 thin slices of ham
1 can cream of chicken soup
½ cup fat-free sour cream
1 box stove top chicken flavor stuffing
1 cup skim milk
8 slices swiss cheese

1. Preheat oven to 350 degrees
2. Place chicken breasts in a lightly greased baking dish. Lay a ham
slice, then a cheese slice on top of each breast
3. In a bowl combine the soup, sour cream, and milk. Mix well and pour
over chicken, ham and cheese. Top with dry stuffing mix.
4. Bake at 350 degrees for 45 minutes or until chicken is cooked
through.

I got this from Weight Watchers. I think it was from a lady who worked there who told my husband we should try it.

Campbell Tacos

Serves 4

1 lb ground beef
1 can tomato sauce
Tabasco sauce
1 package taco seasoning
Corn tortillas
Onion, tomato, lettuce, grated cheese (any other toppings desired)
1 can VanCamps Pork and Beans

1. Brown ground beef, drain grease. Pour in tomato sauce and taco
seasoning, add tabasco sauce to taste.
2. Dice up onion, tomato, lettuce, and grate cheese.
3. Heat up pork and beans in a separate pan.
4. In a medium frying pan heat oil on medium/high heat. Immerse shells
for a few seconds. Place between paper towels.
5. Spoon meat onto a taco, spoon pork and beans, and then whatever
other toppings are desired.

Cabbage Patch Stew

Serves 4

1 lb ground beef
2 tbsp onion flakes
1 cup celery, chopped
2 cups cabbage, shredded
1 tbsp worcestershire sauce
2 tsp chili powder
2 cups water
2 cans kidney beans
16 oz tomato sauce
1 tsp salt
1/8 tsp pepper
1 tbsp sugar

1. Brown meat and then add onion, celery, and cabbage. Cook until
vegetables look clear and wilted.
2. Add water, salt, and other seasonings.
3. Add tomato juice and beans last.
4. Simmer about ½ hour.

BBQ Chicken & Rice Tostadas

Serves 2-3

4 small flour tortillas
1 cup water
1 cup instant white rice, uncooked
1 full chicken breast, cubed & cooked
1 can corn (11 oz), drained
1/2 cup kraft original bbq sauce

1. Preheat oven to 350 degrees
2. Spray both sides of tortillas with cooking spray, place in single layer on baking sheet, bake 10 mins or until crispy and lightly browned
3. Bring water to boil in large saucepan. Stir in rice and cover. Remove from heat and let stand for 5 minutes. Stir in chicken, corn, and bbq sauce. Return to medium heat and cook until heated through.
4. Layer rice/chicken mix on tortillas and enjoy.
