Crock Pot Potato Soup

This was stinkin amazing! I made it forever ago when it was cold out... and LOVED it!

1-30 oz bag of hash browns-I always buy the Ore-Ida ones
3-14oz cans of chicken broth
1 can cream of chicken soup
1/2 cup chopped onion
1/4 tsp pepper
1 8oz package softened cream cheese (not fat free)

grated cheese
bacon bits
diced green onion

1. Add everything to the crockpot except the cream cheese.
2. Cook on low about 6-8 hours (the potatoes get all creamy).
3. A couple hours before you eat, add the cream cheese come back and stir it until it is all melted (it took the full two hours for me).
4. Dish out, top with cheese, bacon, and green onion. AMAZING!

Chicken Salad Sandwiches

2- 12.5 oz cans of chicken
3/4 cup mayonnaise
1 cup halved red grapes
1 diced green onion
1 diced celery stalk
1/2 cup diced apple
salt and pepper to taste (make sure you use enough salt or it really isn't that good :)
cashews

croissants

1. Mix everything together in a bowl.
2. Scoop onto a croissant that is cut in half and enjoy!

Crockpot Ranch Potatoes

2 lbs red potatoes
1 can cream of chicken soup
1 cup sour cream
1 hidden valley ranch packet

1. Cut up potatoes.
2. Mix cream of chicken soup, sour cream, and ranch packet together.
3. Combine potatoes and mixture in the crockpot.
4. Cook on low for 6 hours.
5. Enjoy!

Lemon Parmesan Broccoli

This broccoli was AMAZING as long as you don't get carried away with the lemon juice :)

2 small DRY bunches of broccoli (this fed Logan and I, of course the girls just wouldn't touch it...)
5 Tbsp olive oil
1 1/2 tsp salt
4 minced cloves of garlic

1/4 of a lemon
lemon zest
1.5 Tbsp olive oil
1/3 cup of shredded parmesan cheese (you could use grated instead)

1. Preheat oven to 425 degrees F and cover a cookie sheet in tin foil.
2. Cut broccoli up in florets (I like them smallish)
3. Toss with olive oil, salt, and minced garlic
4. Cook in oven 15-20 mins until broccoli starts to get brown on the edges and crunchy.
5. Pull out of oven and sprinkle lemon juice, lemon zest, olive oil, and shredded parmesan cheese on top.
6. Enjoy!

Creamy Garlic Pasta

2 tsp olive oil
4 minced garlic cloves
2 tbsp butter
1/4 tsp salt
1/2 tsp pepper
3 cups chicken broth
1/2 lb angel hair pasta
1/2-3/4 cup grated parmesan cheese (last time I made it with 1 cup and it was too much... so depending on how strong you like your parmesan flavor you can decide)
3/4 cup heavey whipping cream
2 tbsp finely chopped fresh parsley

1. Add olive oil to a big pot, heat on medium/low heat.
2. Add the garlic and cook for 1-2 mins, stirring.
3. Mix in the butter until melted.
4. Add salt, pepper, and chicken broth.
5. Turn heat to high until it comes to a boil.
6. Add the pasta and cook as long as package directions say.
7. Reduce heat to medium and add parmesan until melted.
8. Turn heat off and add whipping cream and parsley.
9. Enjoy immediately!

Need a Name Delicious Cake

8 oz Cream Cheese
1 yellow cake mix
3 eggs
1 stick of butter or 1/2 cup
1 lb of powdered sugar (4 cups)

1. Preheat oven to 300 degrees F and grease 9x13 pan.
2. Combine melted butter, 1 egg, and cake mix and mix well.
3. Press into bottom of pan, spread evenly.
4. Mix 2 eggs, softened cream cheese, and powdered sugar together well.
5. Pour powdered sugar sauce over the top of the cake mixture in pan.
6. Cook in oven for about 40 minutes (until top is turning a golden brown).

Copy Cat Crock Pot Olive Garden Zuppa Tuscana

1 lb Italian sausage (mild or hot, whichever you prefer)
3 large potatoes sliced thinly and fourthed (I used 6 small red because I didn't have regular)
1 large onion
1/4 cup bacon bits
2 minced garlic cloves
2 cups kale
16 oz chicken broth
1 quart water
1 cup heavy whipping cream

1. Brown sausage and chop into small pieces.
2. Combine sausage, potatoes, diced onion, bacon bits, minced garlic, chicken broth, and water.
3. Cook on high in crock pot for about 4 hours.
4. Just before eating, turn off crock pot, add kale and cover for 5 minutes.
5. Then add whipping cream, mix, and eat!

Olive Garden Breadsticks Copy Cat

1 1/2 cups of warm water
1 package of active dry yeast
4 cups of all purpose flour (the recipe called for 1/4 cup more, but that was just a little too much, so I'm guessing about 4 cups would be better)
2 Tbsp unsalted melted butter
2 Tbsp sugar
1 Tbsp salt

1. Dissolve sugar and yeast in the warm water and let sit for 10 minutes.
2. In a separate bowl combine flour and salt.
3. Add yeast mixture and melted butter.
4. Mix well, knead until dough is smooth.
5. Roll dough into strips, lay on greased cookie sheet, cover the dough and leave it to sit in a warm place for about 45 minutes.
6. Preheat oven to 400 degrees F.
7. Cook breadsticks for 6 minutes, then brush breadsticks with half of 1 stick unsalted butter, 2 tsp garlic powder, and 1 tsp salt all mixed together.
8. Cook breadsticks for 6-7 more minutes.
9. Brush the other half of the butter mixture on the breadsticks.
